No need to expose jellyfin to the internet if you selectively allow peers on your lan via wireguard.
It is certainly debatable whether cachyos is a beginner distro. That aside though, there may be some “lost in translation” effect going on in regards to flatpak. I’ve used arch for somewhere in the ballpark of 15 years, and have still to find a usecase on this distro.
I can certainly see the benefits on less bleeding edge distros though. Are you positive your issues come from lack of flatpack integration, and not from using flatpack in the first place?

I use my own version of inbox zero.
I manually archive emails I might need in the future (like rent payment confirmations, job position applications that got past the screening interview, official correspondence with local administrative bodies, and very few other things).
I keep things that need action or are ongoing in the inbox (like online orders until they arrive, event tickets).
I delete useless emails (newsletters, code confirmations, online order emails or event tickets once the order arrives or the event passed) possibly preceded by unsubscribing.
That’s it, I usually have 0 to 3 emails in my inbox. No plugins, no filters.
I believe your situation, that said I set up wireguard on my SO’s mac and all that is needed is to flip a switch in an app to connect. For my aunt, I’d likely set that up permanently since it only affects traffic when accessing the lan.
