Openmediavault only seems to run on Debian which is a no go for me. I’m looking for something immutable (ie an an appliance)
I would strongly recommend against publicly exposing it. It will get hammered by bots continuously.
Instead, I would move public repos to Codeberg

Jellyfin is a honestly pretty good solution
I miss the old Kids TV channels that were age appropriate, entertaining and educational

Bash? (and Ansible)
OpenWRT does support more recent hardware if you know what you are looking for
Only use network gear for wireless. The hardware in client devices is not designed to work well as a AP and will perform poorly.
I would just pickup some used equipment and flash openwrt. It is relatively straight forward and should work decently well.
Not to mention corporate surveillance. Companies would love to know your age.

Skip the pie as it is really terrible for the money you are spending
Instead, find a old workstation and setup Linux.

Google only gives you about $100 to start with

What’s the end goal?

Grist
I know use spreadsheets for just about everything

The process is designed to create friction. Users must first enable developer mode in system settings. They then need to confirm that they’re not being coerced. After that, they need to restart their phone and reauthenticate. And then they need to wait one day.
Waiting one day is totally unreasonable. However, I don’t mind turning it on in developer settings.

There’s a better way
Start with the last Forgejo version to be compatible with with Gitea and then slowly upgrade Forgejo one version at a time. This should be trivial to do and can be scripted easily.
You need monitoring
Yeah I’m still moving away from it. They are going as closed source as they can without breaking the GPL
